Confusing as this may seem; this cake doesn’t actually contain any coffee in it. Though you can probably add a dash of coffee without ruining the overall taste of it (no instant coffee please). Coffee in the name comes from the fact that Coffee cakes generally are served with coffee. However, since I am not a coffee drinker I prefer to eat this delight at any other time of the day. Great for breakfast!
Ingredients
½ cup crushed walnuts
¾ cup sugar
¼ cup butter
1 egg
½ cup milk
1 ½ cups flour
2 tsp. Baking powder
½ tsp. Salt
½ cup raisins * optional
1 tsp almond flavouring
Toppings
Chopped apples
Cinnamon and sugar
Directions
Heat oven to 375 degrees Fahrenheit
Sift dry ingredients together in a bowl until nicely mixed. Next, beat egg and milk together. Add mixture + butter to the dry ingredients. Mix everything together however do not over do it. The butter should still be lumpy. Add half the crushed walnuts in the mix along with the almond flavouring. Spread in a 9 x 9 pan that has been greased (use butter for this).
Add the rest of the apples and walnuts to the top, then mix the sugar and cinnamon together to sprinkle on top
Bake for 35 minutes or until done.
