Simply delicious and easy to make. This meal will have folks clambering for more and when there is none left. They’ll suffice to licking their bowls for every crumb.
Ingredients*
1 cup Barley
Spinach (as desire)
6 cups of chicken broth
1 Onion (Chopped)
Parsley (dry or fresh)
2 Garlic cloves (Crushed)
Black pepper (lots)
Olive oil
*I cook this meal on the wood fireplace so the amount of ingredients needed is based on that. For example you probably need a different broth to barley ratio.
Directions
Saute the onions, and garlic with olive oil in your favourite frying pan. Once saute, add a bit of the broth and all the barley. Let simmer and stir when needed. Once the broth has been absorb, add more of the broth. Rinse and repeat until there is no more broth. During the process, add black pepper and parsley to taste. When almost all the broth is gone add the spinach. Make sure everything is stirred well together.
Serve and enjoy.
Optional: Add a touch of olive oil on everyone’s serving.
