This is a quick and easy meal to do on a slow evening; or for guests. The recipe calls for cherry tomatoes and fresh basil however using grape tomatoes, regular tomatoes are just fine as well as with dry basil during the off season. Note that the recipe calls for cooking on the stove top as well as in the oven with a roasting pan or a creuset.
8 cups of tomatoes (cherry or grape)
1 Spanish onion chopped
3 to 4 garlic cloves. Chopped or squeezed.
4 Italian sausage (can be other type if you like)
Ground black pepper
375g of penne pasta (can use another style)
4 shallots (green onions)
Chopped up your ingredients and combine everything except for the pasta in a pot (I prefer creuset as there’s less dishes); season to taste. Next transfer the creuset into the oven at 375 degrees Fahrenheit and bake/roast until everything starts to smell delicious. It takes roughly 45 minutes or so. Once done take it out of the oven and place it on the stove top. Prepare and cook the pasta in salted water. Once done combine everything in a serving bowl and serve.
Note: If you’re using fresh basil then it be best to add it at the end.
